Sheet Pan Sausage and Veggies

  • Cookie sheet
  • Cutting board
  • Knife
  • Basting brush


  • 1 package of Italian Sausage. Or 4 links from your butcher
  • 5 red potatoes
  • 2 cups sliced brussel sprouts
  • 2 orange peppers
  • 3/4 yellow onion
  • 3/4 cup cherry tomatoes
  • 3 Tbsp. extra virgin olive oil
  • 2 tsp. salt
  • 1.5 tsp. garlic powder
  • 1 tsp. fresh ground pepper
  • 2 Tbsp. fresh parsley, chopped


  • Preheat oven to 400 degrees.
  • Slice all the veggies and sausage and add them to the cookie sheet.
  • Use the basting brush to coat all of the veggies and the sausage with the extra virgin olive oil.
  • Sprinkle on the garlic powder, salt and pepper.
  • Put the cookie sheet in the oven on the middle rack. Cook for 15 minutes.
  • After 15 minutes, remove the cookie sheet from the oven and flip veggies and sausage.
  • Add back to the oven for 15 minutes. Add an extra 5 minutes if you want more char.
  • When time is up, remove the sheet pan and sprinkle everything with fresh, cut parsley. Serve immediately.
