Some nights, simple dinners are the best dinners. Sheet pan dinners are an easy way to make delicious, fresh meals that are packed with vegetables and make cleaning easy too. This Sheet Pan Sausage and Veggies dinner is one of my favorites!
Using Italian Sausage
I love Italian sausage and I use it to flavor sauces and stuff veggies all the time. It’s packed with baked in flavor and is an easy way to elevate any vegetable. It’s one of the meats that I could eat a few times a week and never get sick of – especially since you can find so many different types if you buy from the meat department or a local butcher.
For this Sheet Pan Sausage and Veggies dinner I used a Garlic and Herb Mild Italian Sausage that we purchased from the meat counter. But no matter which direction you go with your Italian Sausage, you really can’t pick a bad one.
Picking your veggies
You can clearly see which veggies I used here just by looking at the photo and I’ll detail them in the printable recipe below. However, you can also use whatever veggies you love versus following the ones I have.
I like to make the my Sheet Pan Sausage and Veggies colorful and flavorful. I always love to pair peppers with sausage because that’s peppers and sausage is a pretty standard Italian meal. In this sheet pan meal I used orange peppers, which I like the best due to their mild and semi-sweet flavor.
As for my other veggies, I made sure they just all worked well together. I added in onions because I love the flavor of roasted onions and they go with everything! I used the cherry tomatoes for a spot of color and then I added my favorite veggie; brussel sprouts. To me there’s really no better roasted veggie flavor than brussel sprouts. They’re especially good when you pair them with sausage or bacon.
Lastly, I added some red potatoes in to make this dish feel a little meaty and more like a meal.
30 minute meal
This Sheet Pan Sausage and Veggies meal not only tastes amazing but it only takes 30 minutes to bake. This doesn’t count your cut time but if you cut everything the night before you can pretty much dump it on the sheet pan and be good to go. I tend to just cut everything right before I bake it and it only takes a few extra minutes.
Whole 30 approved
A nice thing about this Sheet Pan Sausage and Veggie meal is that it is Whole 30 approved and low carb! I’m not on a Whole 30 diet but we often try to eat low carb because carbs love my thighs so much. However, we have done the Whole 30 before and I always felt like I was eating the same thing day after day on it. This is a nice alternative to eggs and sweet potatoes.

Sheet Pan Sausage and Veggies
This Sheet Pan Sausage and Veggies is a delicious and easy meal to make any time of the year.

Equipment
- Cookie sheet
- Cutting board
- Knife
- Basting brush
Ingredients
- 1 package of Italian Sausage. Or 4 links from your butcher
- 5 red potatoes
- 2 cups sliced brussel sprouts
- 2 orange peppers
- 3/4 yellow onion
- 3/4 cup cherry tomatoes
- 3 Tbsp. extra virgin olive oil
- 2 tsp. salt
- 1.5 tsp. garlic powder
- 1 tsp. fresh ground pepper
- 2 Tbsp. fresh parsley, chopped
Instructions
- Preheat oven to 400 degrees.
- Slice all the veggies and sausage and add them to the cookie sheet.
- Use the basting brush to coat all of the veggies and the sausage with the extra virgin olive oil.
- Sprinkle on the garlic powder, salt and pepper.
- Put the cookie sheet in the oven on the middle rack. Cook for 15 minutes.
- After 15 minutes, remove the cookie sheet from the oven and flip veggies and sausage.
- Add back to the oven for 15 minutes. Add an extra 5 minutes if you want more char.
- When time is up, remove the sheet pan and sprinkle everything with fresh, cut parsley. Serve immediately.
