Barbecue Chicken Tostadas

We love to have a good twist on in our family meals and these Barbecue Chicken Tostadas are a great way to change up taco Tuesday with a little bit of Tex-Mex smokey barbecue.

With just a few ingredients, these Barbecue Chicken Tostadas are sure to be a family favorite. You can make them in about 30 minutes with a pressure cooker or put the chicken in a slow cooker in the morning and have them ready to go at dinner time!

The tostada ingredients

This recipe starts with a crispy corn tostada and a layer of Bush’s® Homestyle Baked beans. They have a delicious tangy sauce with cured bacon, brown sugar and spices that pair beautifully with my homemade zesty and sweet barbecue sauce. They’re naturally gluten free and cholesterol free and they have just 150 calories per half a cup. This recipe uses about 1/4 cup per tostada so you can have a couple. 😉

 

Then, I layer on barbecue chicken with a homemade barbecue sauce that goes perfectly with Bush’s Baked Beans. It also includes some brown sugar, spices and tangy flavor that will be a family favorite. We use it on everything from ribs to this pulled chicken to pulled pork and even on salad!

 

Next, there’s a quick homemade coleslaw that provides an excellent crunch to it all! It takes about 5 seconds to pull it together and put it aside in the fridge.

 

Lastly, I like to add on cilantro and Cotija cheese (heavily!) to give the Barbecue Chicken Tostadas that last burst of flavor.

Cooking Barbecue Chicken Tostadas

To make this recipe, you need to make the pulled chicken. The easiest way for me to do that is in the pressure me cooker. I set it on manual for 20 minutes and let it go while I make the coleslaw and chop the cilantro.

 

If you don’t have a pressure cooker, you can also make this in a slow cooker. If you put it in during the morning, set it for 6-8 hours and then enjoy later that evening!

Barbecue Chicken Tostadas

Equipment

  • Pressure cooker or slow cooker

Ingredients

Tostada Ingredients

  • 1 package of chicken breast
  • 1-2 16 oz. cans of Bush’s Homestyle Baked Beans
  • 1/2 cup cilantro
  • 1/2 cup Cotija Cheese
  • 1/4 cup water
  • 1 cup of barbecue sauce, divided
  • 1 package of tostadas

Barbecue Sauce Ingredients

  • 1 1/2 cup ketchup
  • 1/2 cup Worcestershire Sauce
  • 1 Tbsp. soy sauce
  • 1 tsp. liquid smoke
  • 1/2 tsp. hot sauce
  • 2 Tbsp. yellow mustard
  • 5 Tbsp. light brown sugar
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 3 Tbsp. lemon juice, fresh
  • 2 Tbsp. maple syrup
  • 1/2 tsp. apple cider vinegar

Coleslaw Ingredients

  • 6 oz. shedded coleslaw mix
  • 3 Tbsp. mayonaise
  • 2 Tbsp. lemon juice, fresh
  • 1 Tbsp. of brown sugar
  • A bit of fresh ground pepper

Instructions

  •  Mix together all of the ingredients for the barbecue sauce and set it aside. If you are making this in the morning, put the sauce in the refrigerator.
  • Add the chicken to the pressure cooker with the water and 1/2 cup of barbecue sauce.
  • Cook on manual for 20 minutes. (Remember the pot will need some time to come to pressure too.)
  • Add all the ingredients together for the coleslaw and mix. Put this in the refrigerator until you need it.
  • Heat up the Bush’sHomestyle Baked Beans. You can do this on the stove or in the microwave. 
  • Chop cilantro and grate Cotija cheese. 
  • When the chicken is done, shred it and mix with another 1/2 cup of barbecue sauce.
  • Layer the BakedBeans onto the tostada shells, add the chicken, add the coleslaw. 
  • Top it off with lots of cheese and cilantro and serve!
